I use Google Fit on my OnePlus devices. And Samsung Health on my S8+.
It never felt awkward.

You are talking about two very different things.
The “Jelly Effect” is provoked by a hardware situation - it has to do with the refresh rate....
I think it’s a little early for that.
I’m sure OnePlus will let us all know prior to launch. :)
